I failed to get around to post about Mustang and the 7 days of 4th of July... fireworks shows everynight... every direction. the fourth .... I could smell sulphur on the 3rd floor and the street was covered in smoke. This was from the locals. Rose has even more stories about this...
But that's not what this post is about. I wanted to talk about that mystery fruit.... the Plantain. After countless times wondering why my mother never got it... and after countless times of passing it by on my own.. and even more times that my kids have asked me about it... (and after seeing several shows which talked about cooking it)... I decided to buy some and try them.
The method was:
- peel em
- chop into disks 1/4 inch thick
- heat vegtable oil in pan (enough to come up half way of plantain slice)
- brown slices on both sides (3-5 min)
- smash up garlic cloves and mix with salt (mortar pestle stuff)
- arrange browned slices and top with garlic mixture
- then... SMASH em ! with specific wooden thing... beer bottle/coffee mug work too
- fry even more both sides (~3 minutes in total)
- cool and enjoy
And so I follow this (no cool mortar pestle though.. just choppity chop), and they are pretty good. Kinda like a salty garlicy potato chip w/ hint of banana. The process is worth it. Smashing is fun and is something even the kids enjoy :D
